One is an attempt to model a system accurately, the other is just meant to trick you. Anything you see in a Codemasters game isn't simulated, it's hacked together and there's a huge difference. I've usually disliked snow stages in rally games, but now they're actually a lot of fun, with snowbanks giving a pleasingly real amount of resistance.
